- 1 table spoon of minced garlic
- 1 table spoon of minced onion
- 1 teaspoon of cayenne pepper
- 1 table spoon of minced red bell pepper
Pour these ingredients over your filets in a lager bowl and allow marinading for at least an hour in your refrigerator
After marinating, place filets in a deep pan with 4 table spoon of olive oil or grape seed oil to prevent sticking.
Flip fish to very light golden brown
Since we are using very little oil use medium heat
Leave the filets in the pan and add a 1/4 cup of white wine and an 8oz can of tomato sauce.
Lower the heat low and allow simmering for 15 minute with the cover on
After 15 minutes, it is ready and you know what to do next.
Serve over a bed of rice, pasta, or with French fries, and hush puppies. Either way it will be great!
